Course Description: An integrated overview of the principles of nutritional science, with emphasis placed on the role of nutrition in improving health. Topics will include guidelines for food intake, physiological roles of nutrients, nutritional concerns throughout the lifecycle, global nutritional issues, and the role of diet in the prevention of disease.
